The rosy pink-colored chocolate comes from the Ruby cocoa bean. The plantation of this particular cocoa can be found in many different regions around the world such as Brazil, Ecuador and the Ivory Coast.
The flavours described as a tension between berry-fruitiness and luscious smoothness but no extra colours or flavours are added to create the pinkish nuance, which actually comes from a powder extracted during the processing. This has led some to believe that the cocoa processor has utilized not fermented cocoa as raw cocoa beans are naturally slightly pink in colour.
In reality the ruby beans are entirely natural, not genetically modified and not derivative products: it comes from the dedication to years of research into the artisan processes of making chocolate.
